Grandma's potato salad

½cupButter or margarine
¼cupVinegar

½cupSugar
teaspoonCornstarch
¾cupSalad dressing -- or
Mayonnaise
¾cupHeavy cream -- whipped
6poundsRed salad potatoes
Cooked, peeled and sliced
½cupOnion -- chopped
¼cupGreen onions -- sliced
1teaspoonSalt
½teaspoonPepper
Leaf lettuce, optional
3eachesHard-cooked eggs -- sliced
Paprika

Directions

In the top of a double boiler over boiling water, heat water, butter and vinegar in a bowl, beat eggs: add sugar and corn starch. Add to butter mixture; cook and stir constantly until thick, about 5-7 minutes. Remove from the heat and allow to cool. Stir in the salad dressing; fold into the whipped cream. In a large bowl, toss potatoes, onion, green onions, salt and pepper. Pour the dressing over and mix gently. Chill. Serve in a lettuce-lined bowl if desired.

Garnish with the hard-cooked eggs and sprinkle with paprika. Yield: 18 servings
