Ginger plum pork chops

| 4 | Boneless pork chops, 3/8\" thick | |
| 1 | teaspoon | Vegetable oil |
| 1 | Jar (8 oz.) plum preserves | |
| 2 | teaspoons | Ground dry ginger |
| 3 | tablespoons | Cider vinegar |
Directions
Heat oil in nonstick skillet over medium-high heat. Brown chops on one side, turn; stir together remaining ingredients and add to skillet. cover skillet, lower heat and simmer 5 minutes. Serve with roasted potato wedges if desired. Makes 4 servings.
