Fruity banana loaf

Yield: 2 loaves

Measure Ingredient
1 cup Sugar
½ cup Shortening
2 \N Eggs
2 cups Flour
1 teaspoon Baking soda
¼ teaspoon Salt
3 \N Ripe bananas (1 cup)mashed
¼ cup Milk
1 cup Candied cherries
¼ cup Candied pineapple
½ cup Chopped nuts
½ cup Raisins

In a bowl, cream sugar and shortening until blended. Add eggs, beat well. Combine flour, soda and salt. Combine bananas and milk. Add flour, alternately with banana mix, to creamed mixture. Stir in fruit and nuts. Pour into 2 greased pans (7½ X 3 ½). Bake in 350 degree oven for 55/60 minutes. Cool. Remove from pans and cool.

Wrap and store overnight or freeze.
