Fruit salad w/ honey dressing

| 1 | cup | Cubed honeydew melon |
| 1 | cup | Cubed fresh pineapple |
| 2 | Kiwi fruit; peeled & sliced | |
| 1 | cup | Strawberries; hulled & halved |
| Lettuce leaves | ||
| ½ | cup | Vegetable or light olive oil |
| ¼ | cup | Honey |
| 2 | tablespoons | Fresh lemon juice |
| ½ | teaspoon | Salt |
| ½ | teaspoon | Ground ginger |
| ½ | teaspoon | Paprika |
| ¼ | teaspoon | Dry mustard |
Directions
HONEY DRESSING
Honey Dressing: Combine all ingredients and blend with an electric mixer or food processor for 5 minutes or until thickened. Fruit Salad: Combine fruit (or any other seasonal fruits to equal 5 cups) with dressing and arrange on lettuce-lined salad plates.
