Ingredients

2Jars (6 oz) marinated artichoke hearts, chopped; reserve marinade
3Green onions, chopped
1largeGarlic clove, mashed
4Eggs, beaten
6Soda crackers, crushed
½poundsSharp cheddar cheese, shredded
2tablespoonsParsley, chopped
Salt & pepper to taste

Directions

Saute onion and garlic in reserved marinade until limp. Beat eggs and add crackers, cheese, parsley, chopped artichokes, onion/garlic mixture, and salt and pepper.

Put all into a buttered 8 x 8 baking pan. Bake at 325 degrees for 35 - 40 minutes, until set (test with a toothpick).
