Ingredients

| 2 | Jars (6 oz) marinated artichoke hearts, chopped; reserve marinade | |
| 3 | Green onions, chopped | |
| 1 | large | Garlic clove, mashed |
| 4 | Eggs, beaten | |
| 6 | Soda crackers, crushed | |
| ½ | pounds | Sharp cheddar cheese, shredded |
| 2 | tablespoons | Parsley, chopped |
| Salt & pepper to taste | ||
Directions
Saute onion and garlic in reserved marinade until limp. Beat eggs and add crackers, cheese, parsley, chopped artichokes, onion/garlic mixture, and salt and pepper.
Put all into a buttered 8 x 8 baking pan. Bake at 325 degrees for 35 - 40 minutes, until set (test with a toothpick).
