|2 \N||Jars (6 oz) marinated artichoke hearts, chopped; reserve marinade|
|3 \N||Green onions, chopped|
|1 large||Garlic clove, mashed|
|4 \N||Eggs, beaten|
|6 \N||Soda crackers, crushed|
|½ pounds||Sharp cheddar cheese, shredded|
|2 tablespoons||Parsley, chopped|
|\N \N||Salt & pepper to taste|
Saute onion and garlic in reserved marinade until limp. Beat eggs and add crackers, cheese, parsley, chopped artichokes, onion/garlic mixture, and salt and pepper.
Put all into a buttered 8 x 8 baking pan. Bake at 325 degrees for 35 - 40 minutes, until set (test with a toothpick).
