Here's the recipe: Defrost egg substitute and pour into a pan -- oval or rectangle -- doesn't matter. Add thawed meatless crumbles, cooked broccoli into egg mixture and top with ripped slices of cheese. Bake for 30 minutes at 350 degrees. It's done when the egg is firm and the cheese is bubbly.
You could add other veggies such as mushrooms, onions, carrots, etc. I served this with toast and potatoes. Makes an interesting BRinner! FATFREE DIGEST V96 #150
