Easy fritatta

Yield: 1 Servings

Measure Ingredient
1 teaspoon Oil
12 ounces Potatoes; (red are nice)
6 \N Eggs
¼ cup Salsa
¼ cup Grated cheese
\N \N S & P

Preheat oven to 425'. Wash potatoes & cut small cubes.Leave skin on. Saute in pan a few minutes then cover for 10 minutes. Combine the rest of the ingredients & pour over potatoes in pan. Cover and cook for 3 minutes.

Remove cover & cook in oven for 4-6 minutes until set.
