Fried squash bread

2 | Summer Squash -- diced | |
1 | cup | Cornmeal |
1 | Egg | |
¼ | cup | Buttermilk |
Directions
Wash clean and dice 2 summer squash can cook until soft (do not cook dry, leave about ¾ cup of water in pot). Combine: 1 cup of cornmeal (or cornmeal mix) 1 egg ¼ cup of buttermilk Add squash and water and mix together. Fry in hot oil until golden brown.
