Fried prawns with chilli oil and mouli

2Garlic cloves; finely chopped
8Raw king prawns; peeled and
; de-veined
1tablespoonGrilled chilli oil; (chiu chow)
120gramsMouli; finely diced
1tablespoonLight soy sauce
2tablespoonsFish sauce
1teaspoonSugar

Directions

In a wok or frying pan, heat the oil and fry the garlic until golden brown.

Add the chillies and stir, then add the prawns and stir well.

Add the remaining ingredients in turn, stirring constantly. When the sugar has been stirred in, turn on to a dish and serve.
