Spicy tiger prawns

Ingredients

| 6 | tablespoons | Olive oil |
| 1 | Clove garlic; crushed | |
| 1 | Red chilli; finely chopped | |
| 2 | Salad onions; finely sliced | |
| Salt and freshly ground black pepper | ||
| 2 | 250 g packs raw tiger prawns; defrosted | |
| 25 | grams | Dessicated coconut; (1oz) |
| Chopped coriander to garnish | ||
Directions
Mix together the olive oil, garlic, chilli, salad onions and seasoning.
Add the prawns and place in a non-metallic dish. Cover and chill for 1-2 hours stirring occasionally.
Remove the prawns from the marinade, thread onto wooden skewers and sprinkle with coconut.
Grill under a pre-heated hot grill for 8-10 minutes, turning frequently.
Remove from the skewers to serve. Sprinkle with chopped coriander.
