Spicy prawns with tomato

Ingredients

2tablespoonsVegetable oil
400gramsFrozen large prawns, defrosted & drained
1teaspoonSea salt
½teaspoonBlack peppercorns, crushed
½teaspoonSugar
2teaspoonsGrated root ginger
2Cloves garlic, finely chopped
2tablespoonsFinely chopped spring onions
1Birds (1-2) eye chillies, deseeded fine choppd
213gramsCan chopped tomatoes
1tablespoonCornflour

Directions

1. Heat half the oil in a wok. Stir fry the prawns for 1 minute. Remove from the pan.

2. Add the remaining oil, the salt, pepper and sugar and stir for 15 seconds. Add the ginger, garlic, spring onions and chillies and stir fry for a further 15 secs.

3. Add the tomatoes, then fill the can with water and add to the pan, stirring the cornflour into the last 2 tbsp until smooth. Stir into the pan for 5 minutes.

4. Stir in the prawns and simmer for 2-3 minutes. Serve with Basmati rice.
