Fresh zucchini salad

Yield: 8 Servings

Measure Ingredient
4 mediums Zucchini; sliced
⅓ cup Salad oil
⅓ cup Cider vinegar
¼ cup Sweet relish
3 tablespoons Chopped onion
3 tablespoons Chopped pimento
1 teaspoon Salt
¼ teaspoon Pepper
1 \N Clove garlic; split

Combine oil, vinegar, salt & pepper in saucepan. Bring to a boil. Add remaining ingredients while oil mixture is still hot. Refrigerate overnight, tossing occasionally. Remove garlic before serving.
