Zucchini orange salad

1canWax beans -- drained 16 oz
1canMandarin oranges -- 15 oz

1canWaterchestnuts -- 8 oz
Drained &sliced
cupSugar
1tablespoonWater
1teaspoonSalt

Directions

In a large bowl, toss zucchini, onion and celery. Cover with boiling water; let stand for 1 hr. Drain. Add beans, oranges and water chestnuts. combine remaining ingredients in a saucepan. Bring to a boil; boil for 1 min. Pour over salad; cover and refrigerate 24 hr.

before serving. Yield: 16 to 20 serving. "Edditor Note; Home-canned or fresh green and wax beans can be substituted for puchased canned beans. Use 2 cups of each, and if using fresh beans, cook until crisp-tender before adding to salad.
