Fresh peach cobbler #4

Yield: 8 Servings

Measure Ingredient
6 cups Fresh peeled; sliced peaches (about 6 medium sized)
½ cup Packed brown sugar plus
¼ cup Eqivalent brown sugar substitute
1 tablespoon Cornstarch
1 tablespoon Lemon juice
1 teaspoon Cinnamon
1½ cup Flour
½ cup Sugar plus
¼ cup Equivalent sugar substitute
2 teaspoons Baking powder
⅓ cup Liquid butter substitute
⅓ cup Skim milk
¼ cup Liquid egg substitute
¼ cup Water
\N \N Fat-free cooking spray (enough to cover a 1 1/2 qt casserole dish)

From: "Tracy C. Crosby" <tcrosby@...> Date: Thu, 1 Aug 1996 15:11:28 -0400 (EDT) In a 3 quart saucepan, combine peaches, brown sugar & equivelent, cornstarch, lemon juice and cinnamon. Bring to a boil, stirring constantly. Boil and stir one minute. Pour mixture into a 1½ qt casserole dish that's been sprayed with a fat-free cooking spray.

Heat oven to 350.

Combine flour, sugar & equivalent, baking powder. Stir in butter substitute with a fork until moistened and it resembles course crumbs. Add skim milk, water and egg substitute. Mixing just until dry ingredients are moistened. Drop by scan ¼ cupfulls over the hot filling. Bake 30-35 minutes or until topping is light brown. Serve with non-fat Dream whip or non-fat frozen yogurt.
