1 cup | Sugar |
1 cup | Sugar, brown; firmly packed |

½ teaspoon | Vanilla extract |
1¼ cup | Flour, all-purpose |
1 teaspoon | Soda |
½ teaspoon | Salt |
3 cups | Oats; uncooked (quick or old-fashioned) |
Combine shortening, sugar, eggs, and vanilla; beat until creamy. Sift together flour, soda and salt. Add to creamed mixture; blend well.
Stir in oats.
Shape dough into 1" balls. Place about 2 inches apart on greased cookie sheets. Bake at 350 degrees for 12 to 15 minutes. Cool about 2 minutes before removing from cookie sheets.
NOTE: For variety, add one of the following ingredients with the oats: 1 cup raisins, 1 cup salted peanuts, 1 (6 oz.) package sem-swet chocolate pieces, or a cup flaked coconut.
