Finnish cranberry-raspberry pudding

cup Cran-raspberry drink
3 eaches Tb sugar
¼ cup Quick cooking farina or cream of wheat
teaspoon Salt
Milk

Directions

MAKES: 4 SERVINGS

In medium saucepan, combine all ingredients except milk. Bring to a boil, stirring constantly. Cook 2-3 minutes until thickened, stirring occasionally. Pour into a bowl; place bowl over ice water. With electric mixer, beat ten minutes at high speed until pale pink, thick and frothy. Pour into four serving dishes; serve immediately or refrigerate until ready to serve. Serve with milk to pour over each portion. Per serving: 150 cal., 3g pro., 34g carb., 0g fiber, 1g fat, 95mg chol., 100mg potassium, 1 starch and 1 fruit exchange.
