Fiesta onion salad for a crowd

Ingredients

24 eaches Spanish onions, sliced
2 cups Vinegar
3 cups Sugar
6 cups Mayonnaise
¼ cup Celery or caraway seed
Salt and pepper to taste

Directions

BRINE: 2 CUPS WATER

DRESSING

In a large glass or plastic container, place sliced onions. Cover onions with brine and cover container. Refrigerate overnight. Drain well. Combine dressing ingredients. Pour over onions and mix well.
