Fiesta onion salad for a crowd

24 | eaches | Spanish onions, sliced |
2 | cups | Vinegar |
3 | cups | Sugar |
6 | cups | Mayonnaise |
¼ | cup | Celery or caraway seed |
Salt and pepper to taste |
Directions
BRINE: 2 CUPS WATER
DRESSING
In a large glass or plastic container, place sliced onions. Cover onions with brine and cover container. Refrigerate overnight. Drain well. Combine dressing ingredients. Pour over onions and mix well.
