Festive tomatoes

Yield: 8 Servings

Measure Ingredient
1 bunch Flat-leaf parsley
1 pack Fresh basil leaves
1 clove Garlic, minced
2 tablespoons Pinenuts or walnuts
2 tablespoons Olive or vegetable oil
2 tablespoons Parmesan cheese, grated
2 tablespoons Mayonnaise
4 larges Tomatoes, cut in 4 slices
16 \N Thin slices mozzarella cheese
8 slices Of cucumber, halved
8 \N Pitted black olives, halved
\N \N Parsley leaves, for garnish

Measure 1 cup of parsley leaves and reserve some for garnish. Combine with basil, garlic, nuts, oil, and Parmesan in a food processor or blender and blend until smooth. Blend in mayonnaise. Arrange the tomato slices on a plate. Top each with the parsley-basil mixture, sliced mozzarella, cucumber and olives. Garnish with the reserved parsley leaves.
