Ingredients

4largesFirm Tomatoes
3ouncesCooked Rice
1ounceSweetcorn Kernels
2ouncesMozzarella Cheese, Diced
1tablespoonSnipped Chives
7Basil Leaves, Chopped
Salt and Pepper
1tablespoonOlive Oil
¼teaspoonCajun Rice Seasoning
Basil Leaves to Garnish

Directions

Cut tops off tomatoes; trim bases to stand flat.

Scoop centres into sieve set over mixing bowl. Push pulp through sieve, discard seeds.

Add other ingredients (except olive oil and seasoning) and mix. Pack into tomatoes; top with lids.

Set oven to 180C, 350F, Gas Mark 4. Place tomatoes in oven proof dish.

brush with oil. Sprinkle over seasoning.

Bake for 15 minutes. Garnish to serve.
