Stuffed tomatoes (tab)

Yield: 4 Servings

Measure Ingredient
4 larges Firm Tomatoes
3 ounces Cooked Rice
1 ounce Sweetcorn Kernels
2 ounces Mozzarella Cheese, Diced
1 tablespoon Snipped Chives
7 Basil Leaves, Chopped
Salt and Pepper
1 tablespoon Olive Oil
¼ teaspoon Cajun Rice Seasoning
Basil Leaves to Garnish

Cut tops off tomatoes; trim bases to stand flat.

Scoop centres into sieve set over mixing bowl. Push pulp through sieve, discard seeds.

Add other ingredients (except olive oil and seasoning) and mix. Pack into tomatoes; top with lids.

Set oven to 180C, 350F, Gas Mark 4. Place tomatoes in oven proof dish.

brush with oil. Sprinkle over seasoning.

Bake for 15 minutes. Garnish to serve.
