Fast 'n fabulous fruit cake

Yield: 1 Servings

Measure Ingredient
2½ cup Flour
1 teaspoon Baking Soda
2 Whole Eggs; Slightly Beaten
2⅔ cup Mince Meat
1 can Sweetened Condensed Milk
2 cups Mixed Candied Fruit; 1 Lb.
1 cup Walnuts; Coarsely Chopped
Glazed Cherries; Optional

1. Preheat oven to 300 degrees. 2. Grease a 9" tube pan; line with wax paper and grease again (or use generously greased and floured 10" bunt pan).

3. Sift together flour and baking soda; set aside.

4. In large bowl, combine eggs, mince meat, sweetened condensed milk, fruit and nuts.

5. Add dry ingredients and blend well. Pour into prepared pan.

6. Bake 1 hour and 50 minutes or until toothpick inserted near center comes out clean. Cool 15 minutes.

7. Turn out of pan; remove waxed paper.

8. If desired, garnish with glazed cherries.
