Exotic rice pudding

Ingredients

| 900 | millilitres | Soya milk; (1 1/2 pints) |
| 40 | grams | Creamed coconut; (1 1/2 oz) |
| ½ | teaspoon | Ground cinnamon |
| 1 | pinch | Ground cloves |
| 75 | grams | Pudding rice; (3oz) |
| 25 | grams | Dark soft brown sugar; (1oz) |
| Exotic fruits: mango; kiwi fruit, banana, | ||
| ; paw paw and | ||
| ; pineapple | ||
| Pistachio nuts; chopped | ||
Directions
Place the milk, coconut and spices in a saucepan and heat gently until the coconut has dissolved.
Stir in the rice and sugar.
Bring to the boil, then reduce heat and simmer for 30-40 minutes stirring occasionally until the rice is tender.
Serve with the exotic fruits and pistachio nuts.
