|900 millilitres||Soya milk; (1 1/2 pints)|
|40 grams||Creamed coconut; (1 1/2 oz)|
|½ teaspoon||Ground cinnamon|
|1 pinch||Ground cloves|
|75 grams||Pudding rice; (3oz)|
|25 grams||Dark soft brown sugar; (1oz)|
|\N \N||Exotic fruits: mango; kiwi fruit, banana,|
|\N \N||; paw paw and|
|\N \N||; pineapple|
|\N \N||Pistachio nuts; chopped|
Place the milk, coconut and spices in a saucepan and heat gently until the coconut has dissolved.
Stir in the rice and sugar.
Bring to the boil, then reduce heat and simmer for 30-40 minutes stirring occasionally until the rice is tender.
Serve with the exotic fruits and pistachio nuts.
