Exotic rice pudding

Measure Ingredient
900 millilitres Soya milk; (1 1/2 pints)
40 grams Creamed coconut; (1 1/2 oz)
½ teaspoon Ground cinnamon
1 pinch Ground cloves
75 grams Pudding rice; (3oz)
25 grams Dark soft brown sugar; (1oz)
\N \N Exotic fruits: mango; kiwi fruit, banana,
\N \N ; paw paw and
\N \N ; pineapple
\N \N Pistachio nuts; chopped

Place the milk, coconut and spices in a saucepan and heat gently until the coconut has dissolved.

Stir in the rice and sugar.

Bring to the boil, then reduce heat and simmer for 30-40 minutes stirring occasionally until the rice is tender.

Serve with the exotic fruits and pistachio nuts.
