|3 larges||Navel oranges -; (perfect)|
|1 medium||Red onion|
|2 tablespoons||Blanched sliced almonds|
|3 tablespoons||Red wine vinegar|
|6 tablespoons||Extra-virgin olive oil|
|9 \N||Wine grapes|
|2 \N||Scallions; sliced lengthwise,|
|\N \N||Paper thin|
|\N \N||Salt; to taste|
|\N \N||Freshly-ground black pepper; to taste|
Remove peel and pith from oranges and slice into ⅛-inch slices and lay on platter. Slice red onion paper thin and lay rings over oranges. Sprinkle almonds over oranges. In a small bowl, whisk together sugar, vinegar and oil to emulsify, and pour over salad. Sprinkle with wine grapes and scallions and season lightly with salt and pepper. This recipe yields 4 servings.
