English fruitcake (unbaked)

Yield: 1 Servings

Measure Ingredient
2 cups Oatmeal
2 cups Cracked wheat
2 cups Unsweetened grape juice
2 pounds Seedless raisins; chopped fine
2 pounds Seeded raisins; chopped fine
2 pounds Pitted dates; chopped fine
2 pounds Walnuts; coarsely chopped
\N \N Grated rind of 3 oranges
\N \N Grated rind of 3 lemons
1 cup Honey
6 tablespoons Oil
1 tablespoon Ground cinnamon
1 tablespoon Ground nutmeg
1 tablespoon Ground allspice
½ teaspoon Ground cloves

Mix together oatmeal, cracked wheat and grape juice. Let stand overnight.

Add remaining ingredients. Blend thoroughly by hand.

Line loaf pans with heavy waxed paper, brush with oil. Pack mixture down into loaf pans, a little at a time. Put heavy weight on top and let stand at least 24 hours. Slice thin to serve. Makes 2 loaves.

Note: Recipe did not specify size of loaf pans.
