Easy scampi

Ingredients

¾cup(1 1/2 sticks) unsalted butter
¼cupFinely chopped onion
4Medium cloves garlic,crushed
4Sprigs parsley, minced
1poundsMedium size uncooked shrimp deveined
¼cupDry white wine
2tablespoonsFresh lemon juice
Salt, to taste
Pepper, to taste
Warm rice

Directions

Melt butter in medium skillet over low heat. Add onion, garlic, and parsley and saute till golden; about 10 minutes. Add shrimp and stir just till pink. Remove shrimp and place in ovenproof dish. cover tightly and keep warm. Add wine and lemon juice to skillet and simmer about 2 to 3 minutes. season to taste with salt and pepper and pour over the shrimp.

Serve over warm rice.
