Easy scampi

Yield: 4 servings

Measure Ingredient
¾ cup (1 1/2 sticks) unsalted butter
¼ cup Finely chopped onion
4 \N Medium cloves garlic,crushed
4 \N Sprigs parsley, minced
1 pounds Medium size uncooked shrimp deveined
¼ cup Dry white wine
2 tablespoons Fresh lemon juice
\N \N Salt, to taste
\N \N Pepper, to taste
\N \N Warm rice

Melt butter in medium skillet over low heat. Add onion, garlic, and parsley and saute till golden; about 10 minutes. Add shrimp and stir just till pink. Remove shrimp and place in ovenproof dish. cover tightly and keep warm. Add wine and lemon juice to skillet and simmer about 2 to 3 minutes. season to taste with salt and pepper and pour over the shrimp.

Serve over warm rice.
