Delicat snow pea soup^

Ingredients

4cupsChicken sock
1cupFinely chopped bok choy
¼cupThinly sliced mushrooms
2ouncesTofu, cut in small cubes
1cloveGarlic, minced
¾teaspoonGrated ginger
1teaspoonLow sodium soy sauce
1cupFresh snow peas
¼cupDiced green onions with tops
1Egg white, lightly beaten, optional

Directions

Bring all ingredients except snow peas, green onions and egg whites.

Simmer 20 minutes. Add snow peas and green onion. cook 5 minutes; slowly stir in egg white, if desired, to make a ribon effect. Makes 6 servigs.

Variation: For a creamy soup, add 1 heaping teaspoon cornstarch mixed incold water plus ½ teaspoon light soy sauce. Add to soup, heat until thick and bubbly.
