Del-viled egg-heads

Yield: 24 servings

Measure Ingredient
12 \N Hard-boiled eggs, peeled
3 tablespoons Mayonnaise
1 tablespoon Dijon mustard
½ teaspoon Black pepper
½ teaspoon Paprika
2 tablespoons Sweet relish
2 tablespoons Celery, finely minced
2 tablespoons Green onion, finely sliced
1 tablespoon Red pepper, finely minced

: Slice eggs in half lengthways. Gently scoop out yolks. Place yolks, mayonnaise, mustard, black pepper and paprika in mixing bowl.

Mix thoroughly until creamy. Stir in remaining ingredients.

: With rounded teaspoon, stuff egg whites with filling.

Sprinkle with paprika. Use any extra filling for quick sandwiches.
