Danish apple cake ala katherine

Yield: 6 servings

Measure Ingredient
½ cup Butter; softened
¾ cup Sugar
2 \N Eggs
1 \N Lemon; zest and juice of
1 cup Flour
1 pinch Salt
5 \N Apples
2 tablespoons Butter
¼ cup Cinnamon Sugar

Cream the butter and ¾ cup sugar until light and fluffy. Beat in the eggs, one at a time. Add lemon zest to the batter along with 1 tb of the juice. Beat in the flour and salt until it forms a smooth batter.

Peel, core, and thinly dice the apples. Toss with the remaining lemon juice. Butter a 9" springform pan. Pour in the batter and top with the apple slices. Dot the surface generously with the additional butter.

Bake at 350øF for 60 minutes, or until the cake pulls away from the sides of the pan. Sprinkle with the cinnamon sugar. Let cool on a rack. Serve warm or completely cooled.
