Yield: 6 Servings
|1 large||Onion; sliced,|
|Separated into rings|
|1 medium||Green pepper; chopped finely|
|2½ cup||Chopped fresh tomatoes|
|1 small||Bay leaf|
|2 cups||Corn; cut from cob|
Fry bacon until crisp. Remove from skillet, reserving drippings. Drain bacon & crumble. Add onion & pepper to drippings in skillet. Cook over medium heat, stirring constantly, until crisp-tender. Add tomatoes & bay leaf to onion mixture. Simmer 10 minutes, stirring occasionally. Stir in corn & simmer 10 minutes. Discar bay leaf. Stir in salt, pepper & bacon.
Yields 6-8 servings. (Great way to use up extra tomatoes & fresh corn.) JOHNNIE CARNATHAN
