Creamy spinach and leeks

Yield: 6 servings

Measure Ingredient
2 \N Leeks
3 tablespoons Butter; or marg.
1 clove Garlic; minced
3 tablespoons Flour
¼ teaspoon Salt
¼ teaspoon Pepper
¼ teaspoon Ground nutmeg
2 pounds Spinach; chopped
1 cup Milk
2 tablespoons Parmesan cheese; grated

Trim and wash leeks. Slice into rings. Melt butter in a large skillet and cook leeks and garlic 10 min. In a small bowl combine flour and seasonings. Sprinkle over leeks and cook, stirring, 2 min. Add spinach and milk and cook 5 min until spinach tender and sauce thickens. Stir in Parmesan and serve.
