Creamy low-fat turkey ham zita with spinach

Yield: 8 servings

Measure Ingredient
1 pounds Zita or Penne pasta
½ teaspoon Oil
12 ounces Lean turkey "ham"; cubed
1 Red or green pepper; diced
10 ounces Pkg frozen spinach ; thawed and squeezed dry
1 cup Non-fat sour cream
¾ cup Skim milk
¼ cup Dijon mustard
¼ cup Fresh parsley; chopped
2 tablespoons Fresh dill; minced
1 tablespoon Lemon juice
¾ teaspoon Hot pepper sauce
½ teaspoon Salt [optional]
¼ teaspoon Pepper

Prepare pasta. Heat oil in a large skillet over medium heat. Add turkey ham and pepper; cook until pepper softens and ham browns, about 5 min.

In a blender puree the spinach and the remaining ingredients and add to the ham and peppers. Continue cooking until the sauce starts to simmer and toss the pasta with the sauce.
