Garlic Spinach Vegetable Stew Herb Polenta Helpful Preparation Hints:
I suggest making the stew first -- it will hold easily, gently bubbling and simmering on the back of the stove.
The spinach can be made ahead and then reheated quickly over high heat at the last minute.
The polenta is a bit time consuming but well worth it. (There is always the instant alternative!) The polenta will hold, covered, for about 8 to 10 minutes maximum. If it gets a bit lumpy, simply whisk it until smooth.
