Covey's nest

Yield: 4 Servings

Measure Ingredient
4 mediums Tomatoes; cored
1 \N Head leaf or red lettuce
½ pounds Small bay shrimp
4 \N Lemon wedges
\N \N Optional: olives; chopped, parsley; paprika
1 tablespoon Dry mustard
2 tablespoons Worcestershire
6 \N Anchovy fillets; chopped
1 \N Uncooked egg
½ \N Clove garlic; minced
1 cup Oil
2 tablespoons Red wine vinegar
1 \N Lemon; juice of

DRESSING

Cut tomatoes into star arrangement. Place on bed of lettuce. Fill tomato cavities with equal portions of shrimp. Garnish with lemon, olives, parsley, & paprika as desired. Serve with Dressing. Dressing: Mix all ingredients well.
