Countress maria cherry pudding

Yield: 6 servings

Measure Ingredient
¾ cup Sugar
1 \N Egg
2 tablespoons Shortening
1 cup Flour
1 teaspoon Baking soda
½ teaspoon Salt
½ teaspoon Vanilla
17 ounces Sour cherries; drained and reserve juice
2 tablespoons Butter, divided
1½ cup Brown sugar
⅓ cup Sugar
2 tablespoons Flour

Mix ¾ cup of sugar, the egg, shortening, 1 cup of flour, soda, salt, vanilla and cherries well. Pour the batter into a 9" square pan.

Bake at 350 for 40 minutes.. Combine the brown sugar, 1 T of butter and 2 T of cherry juice in a saucepan. Bring the mixture to a boil.

Pour the sauce over the hot cake. Combine ⅓ cup of sugar, 2 T of flour, 1 T of butter and 1 cup of cherry juice in a saucepan. Boil until clear. Serve warm over pudding. Source: Beverly Hillbillies Cookbook Submitted By MEG ANTCZAK On 03-20-95
