Yield: 4 Servings
Measure | Ingredient |

1½ cup | Chicken broth |
3½ tablespoon | Soy sauce |
2 tablespoons | Sugar |
1½ tablespoon | Mirin* or dry sherry |
1 tablespoon | Fresh gingerroot; grated |
8 ounces | Thin Japanese noodles; cooked & chilled |
1 cup | Cucumbers; thinly sliced |
1 can | (11 oz) Mandarin oranges; drained |
¼ cup | Cilantro; chopped |
* Mirin is a syrupy rice wine. Mix broth, soy sauce, sugar and mirin or dry sherry in a small saucepan.
Heat about 1 minute; stirring constantly, until sugar dissolves. Add gingerroot and chill.
To serve, pour over noodles; add cucmbers, oranges and cilantro; toss.
Makes 4 side dish servings.
