Coconut filling

Yield: 10 Servings

Measure Ingredient
1 cup Sugar
1 cup Milk
18 ounces Frozen coconut; thawed
12 larges Marshmallows
1 teaspoon Vanilla extract

Recipe by: Southern Living Preparation Time: 0:10 Combine sugar and milk in a saucepan; bring to a boil. Add coconut and marshmallows; boil over medium heat 5 minutes. Remove from heat, and stir in vanilla. Yield: about 3 cups. NOTE: Filling is very moist, and absorbs into cake.
