Cilantro rice

Yield: 8 Servings

Measure Ingredient
⅓ cup Vegetable oil
¼ cup Fresh lime juice
½ teaspoon Salt
¼ teaspoon Pepper
3 cups Cooked long-grain white rice
Room temp
¾ cup Each green/red bell peppers
⅓ cup Green onions -- thinly
¼ cup Fresh cilantro -- minced

1. Whisk the oil, lime juice, salt and pepper in a bowl until well blended. 2. Add remaining ingredients. Toss to coat with dressing.

Makes 5 cups or 8 servings.
