Chopped salad with fresh corn

Ingredients

½cupGreen beans -- chopped
½cupCucumber -- peeled and
Diced
1cupTomatoes -- diced
1teaspoonCapers -- drained
½cupRed bell pepper -- seeded
And diced
½cupFresh corn kernels --
Cooked
¼cupVinaigrette -- low fat
Salt and pepper -- to taste

Directions

Blanch green beans in boiling water for 30 seconds. Drain well and place in large bowl. Toss with cucumber, tomatoes, capers, sweet red pepper, corn, dressing, and salt and pepper to taste. Cover and refrigerate one hour.

Adjust seasonings.
