Chocolate sandwich cookies

Yield: 4 Dozen

Measure Ingredient
2 packs (18-1/4 oz ea) devil's food
\N \N Cake mix
4 \N Eggs, lightly beaten
⅔ cup Vegetable oil
1 pack (8 oz) cream cheese, softend
½ cup Butter or margarine, softend
3 \N To 4 cups confectioners'
\N \N Sugar
½ teaspoon Vanilla extract
\N \N Red and/or green food
\N \N Coloring, optional

In a mixing bowl, beat cake mixes, eggs and oil (batter will be very stiff). Roll into 1-in. balls; place on ungreased baking sheets and flatten slightly. Bake at 350 degrees for 8-10 minutes or until a slight indentation remains when lightly touched. Cool. In another mixing bowl, beat cream cheese and butter. Add sugar and vanilla; mix until smooth. If desired, tint with food coloring. Spread on bottom of half of the cookies. Top with remaining cookies.
