Chinese beef and rice

1⅓cupUncooked regular rice
¼cupSalad oil
1tablespoonSalt
3cupsBoiling water
2Beef bouillon cubes
1tablespoon+ 1 tsp. Soy sauce
2mediumsOnions; chopped
4Stalks chopped celery
2Green peppers; chopped
3cupsDiced cooked beef

Directions

In large skillet cook and stir rice in oil over medium heat until golden brown. Add salt, water, bouillon cubes and Soy Sauce. Cover and simmer 20 minutes. Stir in onion, celery, green peppers and meat. Cover tightly.

Simmer 10 minutes longer or until all liquid is absorbed and rice is tender.
