Chicken wild rice salad

¼ | teaspoon | Tarragon, crumbled |
3 | cups | Cooked cubed chicken |
3 | cups | Cooked wild rice |
⅓ | cup | Green onion, finely sliced |
1 | can | Water chestnuts, drained |
½ | teaspoon | Salt |
⅛ | teaspoon | Pepper |
½ | pounds | Seedless green grapes,halved |
1 | cup | Salted cashews |
1 | Grape clusters |
Directions
Servings: 8
Blend mayonnaise, milk, lemon juice and tarragon, set aside. In large bowl,combine chicken, wild rice, green onion, water chestnuts, salt and pepper. Stir in mayonnaise mixture until blendid. Refrigerate coverd, 2-3 hrs. Just before serving, fold in grapes and cashews.
Garnis with clusters of grapes. 8 1 cup servings.
Tip: One cup uncooked wild rice equals 3-4 cups cooked.
