Nutty wild rice salad

Yield: 4 servings

Measure Ingredient
1 teaspoon Salt
1 cup Wild rice
⅓ cup Minced red bell pepper
2 tablespoons Minced scallions
¼ cup Minced parsley
¾ cup Seedless grapes, cut in half
¾ cup Pecans, toasted

Makes 4-½ cups

Bring 4 cups of wter and 1 tsp salt to a boil. Add rice and lower heat. cover and simmer for 50 minutes or until rice is tender. Drain well and let cool. In medium sized bowl, put cooked rice and remaining ingredients. Add dressing and mix gently. Use Orange Drambuie dressing.
