Chicken stuffed papayas

Measure Ingredient
2 tablespoons Butter
1 \N Chopped onion
1 \N Minced garlic clove
2 \N Chopped slices of bacon
2 cups Diced cooked chicken
1 tablespoon Lemon juice
½ cup White wine
3 \N Tomatoes, peeled & chopped
2 larges Firm papayas
1 \N Green apple, sliced
¼ cup Ricotta cheese
\N \N Paprika
\N \N Hot sauce

Melt butter in saucepan & add onion, garlic & bacon. Saute for 5 minutes until onion is soft. Stir in chicken, lemon juice, wine & tomatoes. Simmer for 5 minutes. Peel the papayas & cut them in half lengthwise & scoop out seeds. Arrange papaya halves on a baking dish, cut side up. Heap chicken mixture into each half. Decorate each with apple slices & 1 Tbls. of ricotta. Sprinkle with pinch of paprika & bake in a 350 oven for 40-45 minutes. Serve with hot sauce.
