Chicken paprika~ light version

Ingredients

QuantityIngredient
3poundsChicken breast halves
Without skin -- cut up
¼cupOil
¼cupOnion -- minced
1cupMushrooms -- sliced
1canTomato soup, condensed
½canWater -- if needed
1cupSour Cream, Imitation
1Whole bay leaf
½teaspoonSalt
¼teaspoonPepper

Directions

Lightly dust chicken with flour. Saute quickly until browned. Remove from pan.

Saute onions & mushrooms until lightly browned.

Blend in rest of ingredients, bring to a simmer. Add chicken, and simmer, covered, for 30 to 45 minutes or until chicken is tender.
