Chicken \"ya-hah!\"

Ingredients

2 eaches chicken breasts, skinned
1 each jalapeno(s), fresh minced
1 tablespoon sesame oil, dark
1 each oil for saute
½ teaspoon celery seed, whole
1 tablespoon Szechwan chili sauce
8 ounces water chestnuts, sliced
C celery, coarsely chopped
C onion, coarsely chopped
¾  C red wine, (dry-ish)
2 tablespoons chili powder, home made
½ teaspoon cumin
1 tablespoon oregano, (3/4 t if dried
4 eaches cloves garlic, crushed
24 ounces tomato sauce
½ teaspoon curry powder

Directions

Saute the celery, onions and garlic in the oils while you cut the chicken into bite-sized pieces. When the onion is translucent add the chicken, celery seed, jalapenos and water chestnuts. Saute until chicken is barely done... add the remaining ingredients, cover and simmer for an hour. Serve over either cornbread, rice or pasta... they're all good. Enjoy!
