Chicken chinoise

1cupGreen Beans;blanched
½cupScallion;chopped
1canWater Chestnut;drained, chop
1cupMushrooms;chopped
1cupChicken Stock
2tablespoonsCornstarch
6tablespoonsWater;cold
2tablespoonsSoy Sauce
1tablespoonGinger;fresh, grated
tablespoonOil;peanut

Directions

Cut chicken into bite-sized pieces.

Heat oil to very hot in wok or large skillet; add chicken, cook 1 minute. Add the rest of the vegetables and the ginger, cook 2 more minutes. Add the chicken stock. Mix the cornstarch with the water, add to the chicken, stirring constantly.

Add the soy sauce, cook 1 more minute.

Serve over rice.
