Chewy macaroon pie

Ingredients

2Eggs, separated
¼teaspoonSalt
1cupSugar
¼cupMilk
2tablespoonsButter, melted
1teaspoonLemon juice
¼teaspoonAlmond extract
1cupFlaked coconut
1Unbaked pie shell

Directions

Beat yolks, add salt then sugar a half cup at a time. Add almond extract. Beat egg whites until stiff. Fold into yolk mixture. Pour in coconut. Pour into shell. Bake at 375 degrees for 30 minutes or until inserted knife comes out clean. Cool and serve. Randy Rigg Submitted By RANDY RIGG On 06-07-95
