Cartabosi (liver sausage)

Quantity Ingredient
5 pounds Pigs heads, kidney and toung
2 xes Onions, medium, chopped
1 x Salt and seasoned pepper
1 x Casings

Boil heads, kidney and tounge, save water. Grind meats.

Saute onions in a little fat. Add to meat mixture and add salt and pepper to taste. Stuff mixture into casings then place in saved water and steam for a short time.
