Carrot pineapple fruitcakes

Ingredients

1tablespoonBaking powder
2teaspoonsCinnamon
1teaspoonBaking soda
½teaspoonNutmeg
½teaspoonCloves
½teaspoonSalt
1cupApplesauce -- at room
Temperature
¾cupGranulated sugar
¾cupBrown sugar -- packed
4Egg whites -- whipped
1teaspoonVanilla
2cupsCarrots -- grated
120 oz can pineapple crushed/drained
Powdered sugar icing

Directions

Preheat oven at 350. Prepare 2 loaf pans with cooking spray and flour. In a mixing bowl combine flour, baking powder, cinnamon, baking soda, nutmeg, cloves, and salt. In another mixing bowl, combine applesauce, sugars, egg whites, vanilla, carrots, and pineapple. Mix dry ingredients with wet ingredients just until moistened. Divide batter equally between prepared pans. Bake for 55 minutes. Brush with powdered sugar icing and decorate as desired.
