Yield: 3 servings
|1⅓ cup||Brown sugar, firmly packed|
|2¼ cup||Sifted flour|
|1 teaspoon||Baking soda|
|1 teaspoon||Ground cloves|
|2 cups||Grated peeled apples|
|2 cups||Light raisins|
|½ cup||Apple juice|
|2 cups||Chopped walnuts|
Cream shortening, sugar and egg. Sift dry ingredients together and add to creamed mixture. Stir in remaining ingredients, except icing.
Drop 3 inches apart on a greased cookie sheet. Bake at 350 degrees for about 12 minutes. Cool, spread with icing.
Carmel Icing ¼ c butter ¼ c brown sugar, packed 1½ c powdered sugar ¼ ts salt
2 ½ tb light cream
Mix butter and brown sugar in a saucepan and cook until sugar is dissolved. Add sifted powdered sugar, salt and cream. Beat until smooth. If too thick, add a little more cream. Randy Rigg Submitted By RANDY RIGG On 06-14-95
