Directions
Prepare Sweet Potato-Pecan Muffins (page 198), substituting a mixture of 2 T instant espresso coffee granules dissolved in 2 T boiling water, 1 T coffee-flavored liqueur (optional), and ¼ C milk for the ⅔ C milk. Omit sweet potato and pecans and fold ¾ C semisweet chocolate chips into batter.
